I don't ski, I don't drink craft beer and I don't have a dog, but by golly I am a real Colorado native girl.  So now you can still believe in unicorns!  Here's my ode to motherhood, you know because all of us bloggers write like we were the first, only and last mama out there.

Hello! Hot enough for you out there?!  How about these afternoon showers and flood and tornado warnings?!  Ahh...summertime in Colorado...

Last Sunday was Father's Day, a scorcher, and also the first day of summer!

I wasn't able to see my own Daddy this year, he loves a 6 hour drive away, but we celebrated with this handsome Baba around these parts.  He started off his day his favorite way, by playing soccer!  When he got home we made egg sandwiches, and gave him cards and candy.  We had a special date planned, just he and I, and my mom came to watch the girls.  We had an amazing time at the Kurios Cirque de Soleil show!  It was incredible!  I had never seen a show before, but if ever there was one to be seen, this one was a great one!  Each act was more thrilling and exciting than the one before it!  I was literally gasping, holding my mouth and shrilling!  We were BOTH grinning ear to ear the entire time.  No dull moments.  Even the in between moments were hilarious and entertaining!  I am that cheesy person who left the show, bought a CD for the car and was day dreaming about joint the circus ever since.  When we left I told my husband I wished I could be in it and he asked me what act I would do, I told him nothing too dangerous or high or wary, "probably the lady with the crazy wire hoop skirt."

Back home, we made an early dinner courtesy of Blue Apron!  Have you heard of this company?  Some of you may be seeing Instagram photos and blog posts about it by now, but it is a neat service.  It's not JUST groceries that come to your doorstep, but the exact ingredients, down to the spices, butter, bread crumbs, and recipe cards, and even brief history on the meal all in a refrigerated box!  You can sign up for different meal amounts and frequency.  We tried out two meals and both were excellent!

We made the hearty Italian Meatball Sandwiches on Father's Day for an early dinner and ate them on the patio.  The produce came FRESH, and perfect, and the spices were already measured out so I actually didn't need any measuring spoons, all I had to do was wash and chop the veggies, make the meatballs, fry them in a pan and heat them with the can of tomato sauce, plop them on these sandwich rolls that were so tasty, top with mozzarella, toast in oven for a few and voila!

We tried out the plan for a family of four so we had extra subs for lunch the next day, and plenty to give to Remy.  We also tried out another meal, the Chicken Paillards & Fresh Linguine on Monday night and has our dear next door neighbors over for dinner al fresco again.  We have ate dinner outside pretty much every night lately.

Overall, I can't rave about Blue Apron enough.  I definitely want to do the math for our household budget and see if it might make sense, even for a couple meals a month.  It's not so much the convenience of it, because you still do have a lot of prep work and cooking to actually do, but it is a time saver as far as grocery shopping.  I know sometimes I find I go to three or four different stores to get ingredients for everything, so they do all of that for you, AND they also source cool ingredients from all over.  For example, the linguine was FRESH from a company in Santa Cruz.  SO, it exposes you to food and ingredients you might necessarily find at your local grocer.  I was talking about it with a friend recently and she had heard about it too and I was raving about how I needed NOTHING extra, not even butter and she added, "Yeah, like you just needed salt & pepper, right?"  TRUE!

P.S. That IS a Coca Cola that says "Remy" on it in the last photo!  Husband took her on a daddy-daugther date to a Colorado Rapids MLS game on Saturday and I guess they had a machine there that could create your name.  We had a treat with our dinner!  I NEVER drink soda, but I have to say it was pretty refreshing, the couple sips I had of it!
