Libby's Pumpkin Pie Always
On Monday we made Libby's pumpkin pie!
I went to the grocery store that morning and everything pumpkin was somehow landing in my cart. (Hello Pumpkin Spice Oreos, it's nice to meet you!) It was snowing outside, soup was ninety-nine cents a can and I left with a long receipt tape. We got one of the only two cans of Libby's pumpkin on the shelf! Apparently it is seasonal, which probably means Thanksgiving, but what about fall?!
Anyway, Libby's is THE easiest recipe, I think I grew up on these pies, and I thought we would have a cozy day at home whipping one up. Who needs a Glade Plug-In when you can make the real smell waft through your home! After relaxing a bit,and introducing them to The Nightmare Before Christmas, they begged me to make the pie, so we did. They were incredible little helpers actually! We are now at a new stage- helping in the kitchen!
They had such FUN doing it all pretty much by themselves! I would measure out the ingredients, they would take turns dumping them in and stirring them up. I turned my back to put the rest of the eggs away and they both were grabbing for them! Caught it on camera! So I let them crack them and that was a HUGE deal! Happy to report there were no shells in the egg, and we washed our little hands directly after working with the eggies.
I had a meeting to go to that night, but husband gave small slivers of their finished pie. I made sure to praise them and tell them how delicious it was after I had a piece later. It was GREAT! we also added dashes, big dashes, of McCormick's Pumpkin Pie Spice as well and the spice segment of the prep was pretty generous, but it turned out great! They seemed very proud and happy with their kitchen labor! Maybe it's time to get a mixer! All spoon action here..
A ton of over-documentation, they'll appreciate it someday, maybe...I hope!
